US/AZ History Trip to San Xavier Co-op Farm

Students in US/AZ History this quarter have been learning about the history of agriculture in the Southwest, including the domestication of various crops by the Hohokam and O’Odham cultures, the loss of their traditional food systems as a result of colonization and forced assimilation, and the current movement to revitalize them. To bring this subject matter to life, the students toured San Xavier Co-op Farm, where they got to experience firsthand the attempts to bring back the cultivation and consumption of both traditional crops as well as wild-harvested desert foods, both with their eyes and their stomachs!
