Blue Sky Café’s Pop-Up dinner celebrates the 1st day of Spring!
At 6pm on March 20, Sky Islands tastefully welcomes Spring with our first Pop-Up dinner at our Blue Sky Café. Chef Aidan has created three seasonal courses, with selected wine pairings.
1st course: Slow-roasted butternut squash, poached pear, lemon-infused goat cheese, roasted pepitas and citrus balsamic reduction.
2nd course: Maqui berry powder dusted duck breast with duck skin chicharron and grapefruit gastrique served on red and gold beet sauce.
3rd course: Deconstructed tarta de merengue with grapefruit lavender custard, lime merengue, candied lime zest, and edible flowers.
