With the abundance of cool season produce, students in the Culinary Arts program ran into a very welcome problem- too much to choose from! Mustard greens, carrots, and other vegetables were turned into soups, stews, dumplings, and curries. Students also took a research shopping trip to Sprouts, to find out more about how food and where their food is produced, distributed, and sold. Back at school, students honed their skills of budgeting, converting measurements and scaling recipes, and continued to enjoy the spring harvest.
This spring also saw the beginning of Sky Islands partnering with Rattlebox Farm for their produce deliveries. Rattlebox Farm is very much tied into the practices and beliefs surrounding sustainable local and organic agriculture, and we are extremely excited about the new partnership!
